While all those around you are struggling to keep those New Year’s resolutions, you’ll be enjoying grilling and great food. Sure, when you think of grilling, you imagine burgers, hot dogs, ribs, and chicken wings covered in sauces and marinades. Of course, those over-processed and high-fat foods are our favorites to throw on the grill. But this year, you’re going to be more creative with what you throw on the grill.

Ask yourself, would you rather have a baked, almost tasteless piece of chicken or well seasoned charcoal-grilled flame-kissed chicken? Remember, grilling with charcoal will add to the flavor of any food you grill. Charcoal-grilled meats and vegetables can be just as delicious as the less than healthy counterparts. Here are some tips to get you started in keeping this resolution to grill healthier foods and more often.

Tip 1: Use Herbs With Big Taste

Use herbs like rosemary, garlic, thyme, and sage. These herbs have big, bold tastes that can help add a lot of flavor without adding calories from heavy marinades. Studies show that adding these herbs can reduce carcinogen formation.

Tip 2: Grill Your Vegetables

Yes, this sounds like a broken record to add more vegetables to your meals, but why not enjoy eating your vegetables? Grilling your vegetables can add the extra flavor to make them a side dish you want to eat. Vegetables are high in fiber and low-calorie, making them a good balance to meats.

Recipe

This is a delicious and easy recipe for chicken on the grill. It can be made with a whole cut-up chicken, or just the parts of your choice.
Prep: 10 minutes   Marinate:  30 min.   Cook:15.   Servings: 4

Combine 1 ½  thyme,  2 cloves garlic, 3 T olive oil, 2 T lemon juice, and 1 t  salt in a small bowl and mix well.  Place 4 pieces of chicken in a pan and coat with marinade using a brush to coat top and bottom.  Refrigerate 30 minutes to 3 hours.  Brush grill with oil and grill about 10 minutes on each side on high (more time for quarters)  Brush leftover marinade over chicken while grilling. Let sit 5 minutes and serve
