Trick or Treat Menu:

Americana Grills has the perfect recipes for Halloween Grilling!

Jack O Lantern Burger:

2 lbs. ground Beef

1 Tablespoon Worcestershire sauce

1 teaspoon Garlic Powder

1/2 teaspoon kosher Salt , or to taste

Black Pepper , to taste (fresh cracked if possible)

1/2 lb. American cheese, grated Cheddar Cheese, Blue Cheese or cheese of your choice

Chopped Jalepenos

6 Hamburger Buns

Combine the ground beef, Worcestershire sauce, garlic, salt and pepper in a bowl. Mix together well.

Roll the beef into 6 balls. Split each beef ball in half and flatten out to your preferred patty size. Place about 2-3 tablespoons cheese in the center of one patty, then top with the other patty and seal the edges by pinching and smoothing with your fingers.

Gently press flat, double checking there are no opening for the cheese to escape when the burgers cook.

Cook on a grill or skillet over medium high heat (usually about 3 minutes per side). Toast the buns and serve with your desired burger toppings

Grilled Ghostly Pizza:

Pizza Dough

Pizza Sauce

pepperoni slices

shredded mozzarella cheese

pimiento stuffed Spanish olives

rosemary needles

sliced black olives, torn into pieces

How to Grill your Pizza

Preheat your grill. I have a gas grill; I warm my grill on medium heat about 400 degrees and adjust as needed.

Place dough on foil and then on the heated grill.

Allow the dough to cook on the grill for about 3- 5 minutes and then take the dough off the grill and flip dough over.

Keep the dough on the foil and apply sauce, cheese ghosts, and spiders on pepperoni slices.

Then put the pizza back on the grill with foil under the dough and close the lid. Check often, it doesn’t take long.

Once the cheese is melted take the foil off the bottom with tongs. You can tell when to take the foil off by how stable the crust is, and then finish grilling the pizza to your liking.

How to Make the Spiders

Use a toothpick to make the eyes and legs holes for each Spanish olive.

Insert a rosemary needle in each leg hole to create spider legs.

Place each spider on a pepperoni slice.

How to Make the Ghosts

After applying sauce to the dough, choose several spots for your ghosts.

Place a heaping amount of cheese and add black olive pieces where the eyes and mouth should be. When the cheese starts to melt it will create its own ghostly appearance.

Grilled Bat Wings:

2-3 pounds chicken wings, with tips

1 cup soy sauce

1/4 cup black bean sauce

1/4 cup tamarind paste (or oyster sauce)

1/4 cup brown sugar

1 Tablespoon chili garlic sauce

2 Tablespoons black food coloring (equal parts red, green, blue, yellow)

Mix all ingredients except chicken wings in a medium bowl. Whisk well to make sure everything is combined.

Reserve 1/4 cup of the marinade for basting later. Pour all the rest of the marinade into a large plastic bag with the chicken wings and seal tightly.

Let wings marinate for 2 hours in the fridge. If possible. flip them every 30 minutes to make sure they are getting coated evenly.

Preheat oven to 375 and line two baking sheets with parchment paper.

Remove wings from marinade (discard marinade) and shake extra marinade off the wings. Then lay them on baking sheets.

Bake wings for 30-35 minutes until wings are dark black and cooked through. The juices should run clear.

Baste wings once halfway through cooking and then again when the wings come out with reserved marinade.

Serve immediately!
