Valentine’s Day Menu: Grilled Love

Americana Grills has the perfect recipes for Valentine’s Day!


Grilled Steak:

Ingredients

4 1 1/4-to-1 1/2-inch-thick boneless rib-eye or New York strip steaks (about 12 ounces each) or filets mignons (8 to 10 ounces each), trimmed

2 tablespoons canola or extra-virgin olive oil Kosher salt and freshly ground pepper

Instructions

About 20 minutes before grilling, remove the steaks from the refrigerator and let sit, covered, at room temperature.

Heat your grill to high. Brush the steaks on both sides with oil and season liberally with salt and pepper. Place the steaks on the grill and cook until golden brown and slightly charred, 4 to 5 minutes. Turn the steaks over and continue to grill 3 to 5 minutes for medium-rare (an internal temperature of 135 degrees F), 5 to 7 minutes for medium (140 degrees F), or 8 to 10 minutes for medium-well (150 degrees F).

Transfer the steaks to a cutting board or platter, tent loosely with foil and let rest 5 minutes before slicing.



Grilled Lobster:

INGREDIENTS

1/4 c. melted butter

1 tbsp. lemon juice

1/2 tsp. lemon zest

2 tbsp. freshly chopped chives, plus more for garnish

2 tbsp. freshly chopped parsley, plus more for garnish

clove garlic, minced

1/4 tsp. kosher salt, plus more for seasoning

4 (8-oz.) lobster tails

Extra-virgin olive oil, for brushing

Freshly ground black pepper

Pinch of crushed red pepper flakes

Lemon wedges, for serving

DIRECTIONS

Preheat a grill or grill pan over medium heat. In a small bowl, whisk together melted butter, lemon juice, zest, chives, parsley, garlic, and salt.

Using kitchen shears, cut top of lobster shell from meaty portion of tail. Using a knife, cut halfway through meat down the center, without cutting all the way through. Insert a skewer lengthwise through the lobster to keep lobster from curling up when cooked.

Brush all over with oil and season with salt and pepper. Grill flesh side down until lightly charred, about 6 minutes. Flip lobster and dollop a spoonful of butter mixture on flesh side. Grill until just cooked through, about 5 minutes more.

Remove lobster from grill and sprinkle with red pepper flakes. Serve with lemon wedges.



Grilled Oysters:

Ingredients

2 cups butter, softened

½ cup finely grated Parmesan cheese

¼ cup finely chopped parsley

2 garlic cloves, minced

1 tablespoon Worcestershire sauce

1 teaspoon paprika

½ teaspoon ground red pepper

½ teaspoon hot sauce

2 dozen large fresh oysters on the half shell

Directions

Preheat grill to 450°. Pulse first 8 ingredients in a food processor until well combined.

Arrange oysters in a single layer on grill. Spoon 2 tsp. butter mixture into each oyster; grill, uncovered, 7 minutes or until edges curl.

Broiled Oysters: Preheat broiler with oven rack 3 inches from heat. Prepare recipe as directed, placing oysters in a single layer in a jelly-roll pan. Broil 4 minutes or until edges curl and butter drips over the shell.

Grilled Truffles:

Ingredients

1 Tbsp. Butter

14 oz. Sweetened Condensed Milk

¼ Cup Cocoa Powder

¼ Tsp. Chili Powder

Chocolate Sprinkles

Instructions

Melt Butter in cast iron skillet

Pour in Sweetened Condensed Milk

Stir in Cocoa Powder and Chili Powder

Pour mixture onto plate and Chill for 1 hour

Hand roll truffles into 1” balls and then roll in Chocolate Sprinkles
